It’s hard to beat oatmeal for an easy, budget-friendly, and healthy breakfast. If you would like to try a new spin on an old favorite, you will love baked oatmeal. It doesn’t need to be watched over the stove, and I have yet to meet anyone who doesn’t enjoy it!

Baked Oatmeal Recipe
- 2 cups of oats
- 3 cups water
- 1 or 2 diced or shredded apples
- 1/2 cup dried fruit
- 1/3 cup sweetener of your choice (sugar, brown sugar, honey, maple syrup…)
- 1 tsp salt
Mix all the ingredients together in an oven-proof dish (I use a rectangular Pyrex dish). Cover with aluminum foil. Bake at 350 for 30 minutes if you use boiling water, or 1 hour if you use room temperature water.
Makes 4 servings.

Be creative! My kids prefer no dried fruits in it, while my husband loves it with prunes, so I place chopped prunes of half of it before baking. Sometimes I add some cinnamon, other times I replace the apples with pineapple. You can add chopped raw nuts as well. We like to eat ours served with milk and almond or peanut butter on top.
