Lynn’s Grandmother’s Cornbread



2 C. cornmeal

1 tsp baking soda

4 tsp baking powder

1 tsp salt

1/2 C. flour

1 tbsp bacon grease or butter


buttermilk (enough to make a thick batter)

Mix together all dry ingredients. Add buttermilk until texture resembles thick pancake batter. If using regular milk add 1/4 tsp white vinegar. Grease all sides of 9″ or 10″ cast iron skillet with bacon grease. Bake at 425 degrees for 20 minutes.

Recipe can be halved – bake at 450 degrees 10-12 minutes.
