Oven 375 degrees. Greased muffin tins or nonstick pans.
Mix together dry ingredients:
2 c. flour
¼ c. – ½ c. sugar (depends on how sweet you like muffins)
2 ¼ tsp. baking powder
1 tsp. salt
Mix together all wet ingredients:
1 egg slightly beaten
zest of 1 orange
½ c. orange juice
½ c. milk
½ c. cranberry sauce
¼ c. oil
Fold wet and dry ingredients together until JUST mixed; it will be lumpy. Fill muffin pans 2/3 full.
Bake at 20-25 minutes until lightly browned. Serve with cranberry butter.
