1 c. cottage cheese (any)
2 T. oil (canola or light olive oil)
¼ c. flour (any or even oat bran)
¼ t. salt (optional)
Place in blender in order given. Blend until smooth. Heat non-stick griddle or skillet to (med-high 350).
Use small amount of butter to grease. Spread a thin spoonful of batter on hot griddle.
Cook until fairly dry with bubble holes. Flip and cook on other side briefly. These are very thin.
You can fix these as simple as with powered sugar and lemon or as fancy as rolled with 2 t.
sour cream in the center, topped with jam and whip cream or apple sauce and cinnamon.
