1 med. size crust (any thickness)
4 eggs – slightly beaten
¼ c. milk
2 sausage patties lightly browned and diced
½ c. loosly packed shredded cheddar
butter – melted
salt and pepper to taste
Preheat oven to 450. Place pizza on sheet pan and brush lightly with melted butter. Bake crust in preheated oven for 5 minutes. Whisk egg, milk and desired salt and pepper in a bowl. Scramble-cook eggs until just not runny, but still very soft. Spread cooked egg mixture over crust, top with sausage and cheese. Bake 10 minutes until hot, slightly browned and set. Serve immediately.
If you use a larger or smaller crust you will need to increase / decrease the amount of toppings accordingly.
My kids tried it with syrup brushed on the crust while hot from the oven before putting the egg mixture on, when cooked they thought it tasted a lot like a “McGriddle”.
Try different meats, ham, bacon … cheese, mozzarella, swiss, pepperjack… Add other toppings such as olives, sautéed onions, bell peppers, zucchini, spinach, etc… Whatever you would eat with eggs or in an omelet. Even cheese sauce for the base would be nice.
